Memorial Day is this weekend which mean the official kick off to summer and I couldn't be more excited! Even though I don't appreciate the 90 plus degree days in my near future, I love the bright colors, ice cold cocktails and vibrant flavors associated with summer. Today I'm sharing a festive prickly pear margarita recipe inspired by a cocktail I made for an event at Elaine Turner last month. If you haven't tried anything prickly pear flavored before, don't let the bright pink color fool you. I promise it's not overly sweet! This recipe is super easy - you probably have most of the ingredients in your liquor cabinet and you can pick up prickly pear syrup or juice at your local liquor store. PRICKLY PEAR MARGARITA RECIPE
[Makes four cocktails]
6 ounces of silver tequila
1 ounce triple sec or orange liqueur
12 ounces Prickly pear syrup - I used this brand because I prefer the bright pink color but Republic Spirit Blends has an all-natural version that has a light color but tastes delicious as well!
Pink salt to rim
Add the tequila, triple sec, prickly pear syrup, juice from one and half limes to a pitcher filled with ice. Stir really well to combine and chill. Pour the pink salt onto a shallow plate (about 1 tablespoon) and gently shake back and forth so the salt is evenly on the base of the plate. Then use a lime zester to zest one of the juiced limes, sprinkle into the pink salt. Take a fresh lime half and rub it around the rim of the glasses so the salt will have something to stick to. Once the glasses are salted (you can leave this step out if you prefer no salt), fill the glass 3/4 to the top with crusted ice. Add a lime slice as a garnish and pour the prickly pear margarita mixture evenly in each glass. Cheers!
